The Secrète is an oyster with rich flesh, recognizable among thousands by its sea-green color. It is during its maturation in claires that the Secrète takes on its color, filtering a micro-algae whose appearance is mysterious and ephemeral: the blue navicula. This enigmatic and rare oyster is the pride of our company and the exceptional terroir of Marennes Oléron.
Volume of flesh: 14 to 16% of the weight.
Growing method: 3 years at sea.
