Named after the Tsars of Russia, avid consumers of oysters, the Tsarskaya are deep creuse oysters farmed in the Cancale Bay in the north of France, near the Mont Saint Michel. Releasing noted of sweet almonds, crunchy and tender in texture, Tsarskaya oysters are powerful on the palate, with a hint of acidity at the end, like Grand Cru wines.
