Tuber Aestivum Vitt. also known as Summer Truffles,  is native to Europe but is also successfully cultivated in other parts of the globe and appreciated for their unique and musty aroma.

The most plentifully harvested truffle. The fruity body ranges from the size of a hazelnut to that of an orange. The skin is black. The odor is pleasant and ican be quite intense in wales , resembling that of hazelnuts and mushrooms .

Summer truffles have a dark, thick, rough outer skin with large, diamond-shaped pyramids, and a marbled coffee/ cafe au lait colored interior when ripe.

They are served raw on warm dishes, but also can be heated (slightly) to release a more robust flavor and aroma.

Aroma: Black Summer Truffles have an immense amount of flavour for their price. Their delicate aroma, have hints of earthiness, hazelnuts, chocolate, and vanilla. The flavour develops quickly as the season progresses and by early August, when fully mature, they reach a quite pungent flavour and aroma. However, this truffle fetches limited prices on the market because, despite its good size, it is often sold unripe, when it does not yet give off its typical, delicate fungus odour.

Season: from May to August

Cooking Tips: The summer truffle is excellent when it reaches its full growth where traditional sauces can be made by adding it to olive oil hot but not boiling, a touch of garlic, salt and pepper. Ideal for canapés and first courses, meat and fish; we advise to cut them in slices for very special salads.

Fresh Truffles Storing Tips

Fresh truffle is truly one of life’s greatest pleasures. For fresh truffles to be enjoyed at their best, they should be consumed within 4 to 5 days. To savour your fresh truffle for up to 14 days we suggest:

Gently wrap the fresh truffle in absorbent paper, such as paper towel.
Place in a dry, sealed container like tupperware or a glass jar.
Keep the container in the crisper compartment of your refrigerator avoiding the cooler areas of the fridge.
